This week, a practice cake. I needed to test out the recipe before using it for a Big Paid Cake ™ so here we are. I’m glad I tested it first, as it does need a couple more tweaks. The verdict in the staffroom was that it was great – but notably, there were still two pieces left the following day, so it might be ‘good’, but it’s not ‘finish compulsively and lick the plate clean’ like my other mud cake recipes.
I think I’ll actually test this one once more before finalising… which, as I’m writing this on Sunday, means I really need to get a wriggle on, because the final cake is due Friday.
It’s an apricot jam cake filled with vienna buttercream, iced with (lactose-free) cream cheese + brown sugar icing, topped with dried apricots, sunflower seeds, and pepitas (pumpkin seeds). Yum.
