Welcome to #MadeItMonday, where I post something I’ve made in the previous week, and where you can join in and post something you made too! This one goes with the snake cake from last week. The client also needed to cater for vegans (including some serious lactose allergies), so originally I was just going to do the main cake vegan since this recipe is AMAZINGLY FLEXIBLE, but then they also really, really wanted a black forest cake, and there isn’t a great vegan alternative for whipped cream when you really just want whipped cream, AND ALSO I had to bake for school at around the same time for a group of students who include a severe egg allergy, SO it ended up being pretty convenient to just bake the snake cake as per normal, and make a vegan cake for school which I then decanted a little bit of the batter to make the tiny cake below. *breathes*.
So.
It’s a vegan chocolate mud cake with a simple cocoa-icing sugar-water icing and some cherries. I got to taste some of the one I took to school (which I don’t think I took photos of???) and om nom, it was rich and moist and fudgy and delicious. Hurrah.
