Cake this week! Or, well, actually a few weeks ago for a friend’s birthday, but it’s this week’s post, so 🙂
This is a gluten-free coconut mud cake, filled with lemon curd and covered with meringue. Oh, and flowers “borrowed” from the school’s garden bed, oops? O:)
Very delicious – the recipe actually seems to work better as gluten-free – the original is very crumbly (but still moist), so probably I’d need to use actual cake flour rather than regular plain flour if I was going to make it non-GF again.
And yes, the meringue cracked down one side during transport. What can you do?
