Another cake (shock), this time a relatively recent one that I made just a couple of weeks ago for a wedding. This was not the main wedding cake; I was asked to do the ‘dietary requirements’ cake i.e. dairy free, nut free, gluten free and vegan. Luckily enough, CAN DO!! Dietary requirements cakes are kind of becoming my specialty, thanks to my stupid broken body and its insistence that almost literally every food on the planet is secretly a poison.
Anyway, yes: gluten-free vegan mud cake with chocolate icing + filling and additional raspberry jam in the filling too. It was pretty delicious, if the offcuts are anything to go by O:)
The brief was just ‘native flowers’, basically, with the main colours being green + white. White icing is hard to do if you want it to be both vegan AND taste good, hence the chocolate icing, but regardless the client was super happy with the result so we are all good there.
